Pineapple Cheese Casserole

We discovered this dish at an Embry-Riddle potluck where Ingrid Weeks (Executive Secretary for Academics) brought it to share.  At first blush, the name and ingredients does not sound appealing.  I mean, who would want pineapple in a cheese casserole.  However, after about 2 bites, it’s a race for seconds.  We enjoy the same experience with our friends and it has become a staple.  Put it on the table and watch the smirks and protests, but if you get them to try it, don’t be surprised if they want thirds, want to take the rest home, and/or ask for the recipe.

Ingredients
  • 3 (15 ounce) cans pineapple chunks
  • 2 ½ cups shredded Cheddar cheese
  • 8 tablespoons pineapple juice
  • 8 tablespoons all-purpose flour
  • 1 cup white sugar
  • 30 buttery round crackers, crushed
  • ½ cup butter, sliced

 

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  1. In a large bowl combine pineapple chunks, cheese, pineapple juice, flour, and sugar. Spoon into a 9×13 inch baking dish. Top with crushed crackers and butter slices.
  1. Bake in preheated oven for 30 minutes
